Chili Oil WontonChili oil wonton is a signature Szechuan dish. If you eat at a Szechuan restaurant in China, I am 100% sure that this dish will be on their menu. Today, I am going to show you how to make this popular dish at home!

Making wonton at home is pretty easy. I normally like to buy the wonton wrap from the Asian grocery store, and make the wonton fillings myself. For the filling, I simply mixed the ground pork, egg, salt, sugar, oil, cooking wine and white pepper. My mom told me when making fillings for wontons or dumplings, only stir in one direction to help the fillings develop stickiness.

After the fillings are done, next is the fun part, making the wontons! Below is step-by-step how I made the wontons. Besides the filling and the wrap, I also kept a small container filled with water by my side, so I could dip my finger into the water and run it along the edge of the wrap to help create a seal when wrapping the wontons.How to make WontonI mixed sesame oil, chili oil, soy sauce, Chinese vinegar and a couple of other seasonings to make the chili oil sauce.

Ingredients
  • Wonton wrap
  • Wonton Filling:
  • half pound ground pork
  • 1 egg
  • half teaspoon salt
  • half teaspoon sugar
  • half tablespoon oil
  • half tablespoon cooking wine
  • a touch of white pepper
  • Chili Oil Sauce:
  • 1 tablespoon sesame oil
  • 2 tablespoons chili oil ( I used House of Tsang Mongolian Fire Oil)
  • 1 tablespoon soy sauce
  • half tablespoon Chinese vinegar
  • half tablespoon oyster sauce
  • half tablespoon toasted white sesame seeds
  • a touch of salt
  • a touch of sugar
  • a handful of red chili flakes (optional)
  • a handful of cilantro
Instructions
  1. Bring a medium pot of salted water into boiling under high heat.
  2. Carefully throw half of the wontons (about 15 wontons) into the boiling water, wait until the water begin to boil again under high heat.
  3. Turn to medium heat, continue boiling the wontons for another 6-7 minutes until all the wontons have floated to the surface.
  4. Fish the wonton out, drain well and set aside.
  5. Finish cooking the rest of the wontons following the same process.
  6. Mix the wontons with the chili oil sauce, garnish with fresh cilantro and serve.
Notes
Note: With half pound of pork, I made around 30 wontons.
